iv. Hydrolysis of sucrose is called inversion.
Answer:-
Sucrose (C12H22O11) exhibits dextrorotatory optical activity (+66.5°). When sucrose undergoes hydrolysis, either through dilute acid or an enzyme known as invertase, it produces an equimolar mixture of D-(+)-glucose and D-(–)-fructose.
\[\ce{\underset{\text{Sucrose}}{C12H22O11} + H2O ->[H+][\triangle]\underset{\text{D-(+)-Glucose}}{C6H12O6} + \underset{\text{D-(–)-Fructose}}{C6H12O6}}\]
Notably, fructose demonstrates a laevorotation of (–92.4°), which is more significant than the dextrorotation of glucose (+52.7°). Consequently, the hydrolysis product displays a net laevorotation. This transformation of sucrose through hydrolysis is referred to as the inversion of sucrose.
